Main Filling
Cook aromatics and meat
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. When shimmering, add the diced onion and red bell pepper and cook, stirring occasionally, until softened, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant. Push vegetables to the side and add the ground beef and Italian sausage. Break the meat up with a spoon and cook until no longer pink, about 6–8 minutes.
Season and simmer
Stir in the drained diced tomatoes, tomato paste, Worcestershire sauce, dried oregano, smoked paprika, kosher salt, and black pepper. Reduce heat to medium-low and simmer, stirring occasionally, 6–8 minutes to concentrate flavors and thicken slightly. Taste and adjust seasoning. Remove from heat and let cool at least 10 minutes (important so filling won’t melt the cheese layer).
Creamy Cheese Layer
Prepare cheese mixture
In a medium bowl, beat the softened cream cheese with sour cream until smooth. Fold in shredded cheddar, grated parmesan, chopped chives, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly combined. Chill briefly if the meat filling is still hot — you want the cheese layer cool but spreadable.
Assembly & Baking
Preheat and prep pastry
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, unroll or unfold one sheet of puff pastry. If using two, lay them side by side or slightly overlap to make a roughly 10x12-inch rectangle. If using crescent dough, press seams to seal.
Assemble layers
Spread half of the cream cheese mixture over the pastry, leaving a 1/2-inch border around edges. Spoon the cooled meat filling evenly over the cheese layer, leaving the same border. Dollop and gently spread the remaining cheese mixture on top of the meat in a thinner layer (this creates a layered, creamy center).
Seal and finish
Fold the pastry over itself or fold edges up and press to seal, creating a pocket or galette-style free-form rectangle. Trim any very thick edges and crimp with a fork to seal. Beat the egg with 1 teaspoon milk and brush the top and edges with egg wash. Sprinkle sesame seeds if using. Using a sharp knife, make 3–4 small slits in the top to vent steam.
Bake
Bake on the prepared sheet in the preheated oven for 20–25 minutes, rotating once, until pastry is puffed and deep golden brown and cheese is bubbling inside. If top browns too quickly, tent loosely with foil for the last 5–7 minutes.
