Warm the dairy
In a medium saucepan, combine the whole milk and heavy cream. Split the vanilla bean lengthwise, scrape the seeds into the milk, and add the pod as well (or add 1 tsp vanilla extract later). Add the lemon zest and a pinch of salt. Warm over medium heat until the mixture just begins to steam and tiny bubbles form at the edges (do not boil), about 5–7 minutes. Remove from heat, cover, and let steep 10 minutes to infuse vanilla and lemon zest.
Prepare yolks and thickener
While the milk is steeping, place the egg yolks in a medium heatproof bowl. Whisk in the granulated sugar until pale and slightly thickened, about 1–2 minutes. Sprinkle the cornstarch over the yolks and whisk until fully incorporated and smooth.
Temper and thicken
Remove and discard the vanilla pod. Slowly ladle about 1/3 cup of the warm milk into the yolk mixture while whisking continuously to temper the yolks. Continue adding warmed milk in a thin stream until about half has been incorporated. Pour the tempered yolk mixture back into the saucepan with the remaining milk and return to medium-low heat. Stir constantly with a heatproof spatula or whisk, scraping the bottom, until the custard thickens enough to coat the back of the spatula, about 4–6 minutes. Do not let it boil.
Finish and chill
Once thickened, remove from heat and transfer the custard to a clean bowl. If you used vanilla extract, stir it in now. Press a piece of plastic wrap directly onto the surface to prevent a skin from forming. Let cool to room temperature, then chill in the refrigerator at least 2 hours (or up to overnight) until fully set and golden.
Golden Citrus Sauce
In a small saucepan over low heat, combine the fresh orange juice, lemon juice, honey, and orange zest. Warm gently, stirring until the honey dissolves, about 2–3 minutes. Remove from heat and whisk in the butter until melted and the sauce is glossy. Add a very small pinch of turmeric to intensify the golden color and whisk to combine. Taste and adjust sweetness or acidity as desired. Keep warm or let cool to room temperature; the sauce will slightly thicken as it cools.
If you prefer a smoother, slightly thicker sauce, return the mixture to low heat and simmer gently for 4–5 minutes, then strain through a fine-mesh sieve to remove zest and any solids.
Assembly & Garnish
Drizzle 1 tablespoon of the golden citrus sauce over each portion, allowing it to pool slightly on top so the vibrant color contrasts with the custard.
Scatter a few toasted almond slivers and a small sprig of microgreens or an edible flower per serving for texture and visual appeal.
Serve immediately if sauce is warm, or allow assembled portions to rest 10 minutes so flavors meld. Leftovers keep covered in the refrigerator for 2–3 days; keep sauce separate and rewarm gently before serving.
