Soak almonds

Place the blanched almonds in a small bowl and cover with 1/2 cup warm water. Let soak 20–30 minutes to slightly soften and release flavor. Drain, reserving the soaking liquid.

Pulse almonds

Drain the almonds and transfer them to a food processor or high-speed blender. Add 1/4 cup of the reserved soaking liquid (if none remains, use plain water) and pulse until the almonds form a coarse paste, about 30–45 seconds. Scrape down sides as needed.

Make almond infusion

In a small saucepan combine the coarse almond paste, 1 cup water (for syrup), and granulated sugar. Stir to combine. Bring mixture to a gentle simmer over medium heat, stirring frequently to dissolve sugar and avoid sticking. Once simmering, reduce heat to low and simmer very gently for 6–8 minutes to extract almond flavor.

Strain syrup

Remove saucepan from heat. Let the mixture cool 5 minutes, then strain through a fine-mesh sieve lined with cheesecloth or a nut milk bag over a bowl. Use the back of a spoon to press out as much liquid as possible; you should get about 1 to 1 1/4 cups of almond-infused liquid.

Finish syrup

Whisk the reserved almond liquid with lemon juice, vanilla extract, and sea salt until smooth. Taste and adjust: add up to 1/2 tablespoon lemon juice if you prefer brighter acidity, or an additional 1–2 teaspoons sugar for more sweetness. If the syrup is too thick when chilled, stir in 1–2 tablespoons water to reach pourable consistency. Transfer syrup to a clean jar, cool to room temperature, then refrigerate. Syrup will keep 7–10 days refrigerated.

Assembly

Fill four tall glasses with ice (about 1/2 cup ice per glass).

Measure 2 tablespoons of the almond syrup into each glass (adjust to taste; 1–3 tbs recommended). For a lighter almond note start with 1 tbs per glass.

Pour 1 cup (240 ml) of chilled club soda into each glass over the syrup and ice. Stir gently with a long spoon to combine without flattening the soda.

Garnish each glass with a lemon slice and a sprig of mint if using. Sprinkle a few toasted almond flakes on top for texture and extra almond aroma, if desired.

Serve immediately. Leftover almond syrup may be stored in the refrigerator — use it for more sodas, cocktails, or to flavor iced coffee.
