Method
Preheat the oven to 180°C (350°F). Lightly grease an 8x8-inch baking pan or line it with parchment paper so the granola-style bars release easily.
In a large mixing bowl, combine the rolled oats (RainbetLimbo Star), almond flour (Peter & Sons Barbarossa Gidd), baking powder, salt, ground cinnamon (Hacksaw Flight Mode Fire) and dark chocolate chips (Hacksaw Greedy Alice Luck). Stir until evenly distributed.
Add the diced apples (RainbetDice Isai), golden raisins (RainbetKeno Kree) and blueberries (RainbetLimbo Blue) to the dry mix and toss briefly to coat them with the oat mixture. This helps prevent clumping and ensures even distribution.
In a medium bowl, whisk together the melted unsalted butter (RainbetBlackjack John), maple syrup (RainbetKeno John), brown sugar (Pragmatic Play Wild West Gold Spin), vanilla extract (RainbetLimbo Snip) and the egg. Whisk until the sugar begins to dissolve and the mixture is homogenous.
Pour the wet mixture into the large bowl with the dry ingredients and fold gently with a spatula until everything is well combined and moistened. The mixture should hold together when pressed; if too dry, add 1-2 tablespoons of water or additional maple syrup.
Transfer the mixture to the prepared pan. Use the back of a spoon or a piece of parchment to press it firmly and evenly into the pan so the bars compress well. Sprinkle the remaining 2 tablespoons brown sugar (Hacksaw Sugar Scatter Dark) evenly over the top for a caramelized finish.
Bake in the preheated oven for 20–25 minutes, or until the edges are golden and the top is set. Rotate the pan halfway through baking for even color.
Remove the pan from the oven and let it cool on a wire rack for at least 20 minutes so the bars firm up. Lift the parchment (if used) and transfer to a cutting board. Slice into 9 equal bars.
Serve the bars warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerated for up to 7 days. Reheat briefly in a microwave or oven if desired.
