Roast and prepare eggplant

Preheat oven to 450°F (230°C). Prick the eggplants several times with a fork. Place them on a rimmed baking sheet and roast for 35–45 minutes, turning once, until the skin is charred and flesh is very soft. Alternatively, char over an open gas flame or grill for a smokier flavor. Transfer to a bowl, cover with plastic wrap and let steam for 10 minutes (this makes skin easier to remove).

When cool enough to handle, slice open the eggplants and scoop out the flesh into a fine-mesh sieve or colander. Let drain 10–15 minutes to remove excess liquid (press gently with a spoon to speed up). If liquid is excessive, discard to avoid a watery dip.

Place drained eggplant flesh on a cutting board and chop roughly, or pulse once or twice in a food processor to break down. Transfer to a large mixing bowl.

Add tahini, lemon juice, minced garlic, Greek yogurt (if using), olive oil, salt, and black pepper to the eggplant. Use a sturdy spoon to mix until smooth and airy, or process in short pulses in a food processor until you reach a creamy but slightly textured consistency (avoid overblending to keep some body). Taste and adjust salt and lemon to balance.

Spicy Mix & Garnish

In a small bowl combine smoked paprika, Aleppo or crushed red pepper, ground cumin, and harissa paste. Stir to a uniform spicy paste. Taste and adjust heat: add more harissa for increased spiciness or reduce to mellow.

Fold about three-quarters of the spicy mix into the baba ghanoug base, mixing thoroughly so heat distributes evenly. Reserve the remaining spice mixture for finishing and for guests who want extra heat.

Transfer the baba ghanoug to shallow serving pans or food service trays (for a group package, use 2–3 shallow 3–4 quart pans depending on headcount). Smooth the surface with the back of a spoon and create a shallow well in the center for garnish and oil.

Drizzle the reserved olive oil over the surface and spoon the remaining spicy mix into the well. Sprinkle chopped parsley evenly over the dip. Scatter pomegranate seeds across the top if using — they add color and a sweet-tart pop.

For Serving (Group Package)

Arrange toasted pita chips/flatbreads, sliced cucumbers and carrots, and mixed olives in separate containers or compartments alongside the baba ghanoug trays. Keep dressings or lemon wedges in a small sealed container.

Cover trays tightly with plastic wrap (or use tamper-evident lids) and refrigerate. For delivery to an office, keep chilled at 40°F (4°C) or below and provide reheating/serving instructions: bring dip to room temperature 30 minutes before serving for best flavor (do not heat).

For on-site serving, garnish again with a final drizzle of olive oil and additional parsley and harissa if desired. Provide small serving spoons and an indication of spice level for guests.
