Prep vegetables
Rinse and thoroughly dry the mixed salad greens in a salad spinner or clean towel; transfer to a large chilled bowl. Trim and thinly slice the cremini and shiitake mushrooms. Thinly slice the radishes and cucumber. Slice the scallions on the diagonal and roughly chop the parsley. Add the sliced radishes, cucumber, scallions, and parsley to the bowl with the greens and toss gently to combine.
Toasted Nuts & Seeds
Toast the walnuts and pumpkin seeds separately or together in a dry skillet over medium heat for 4–6 minutes, stirring frequently, until fragrant and just beginning to brown. Remove from heat and transfer to a small bowl to cool. Watch carefully to avoid burning.
Warm Mushroom Toss
Sauté mushrooms
In a large skillet over medium-high heat, melt the butter with 2 tablespoons olive oil until shimmering. Add the sliced mushrooms in a single layer (work in batches if needed so they brown instead of steaming). Let mushrooms cook undisturbed 2–3 minutes, then stir and cook another 2–3 minutes until nicely browned.
Add the minced garlic and chopped thyme and cook 30–45 seconds until aromatic. Season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Pour in 3 tablespoons white wine (or sherry or broth) and use a spatula to scrape any browned bits from the pan; cook until liquid is mostly evaporated, about 1–2 minutes. Remove pan from heat and let mushrooms cool 3–5 minutes.
Once slightly cooled but still warm, transfer the mushrooms (including any pan juices) to a medium bowl and set aside. The warm mushrooms will gently wilt the greens when combined and add depth of flavor.
Dressing
Make vinaigrette
In a jar or small bowl, combine 6 tablespoons extra-virgin olive oil, 3 tablespoons white wine vinegar, 1 tablespoon Dijon mustard, 1 teaspoon honey, 1 tablespoon fresh lemon juice, and the minced shallot. Season with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Whisk or shake vigorously until emulsified. Taste and adjust acidity or seasoning as needed.
Assembly
Add the warm mushrooms and any collected pan juices to the bowl with the salad greens and vegetables. Drizzle about two-thirds of the vinaigrette over the salad and toss gently but thoroughly to combine, making sure the warm mushrooms contact the greens to wilt them slightly. Taste and add more vinaigrette if desired.
Sprinkle the toasted walnuts and pumpkin seeds evenly over the salad. If using, crumble the feta or goat cheese on top and scatter microgreens or additional parsley for freshness.
Season the finished salad with an extra pinch of salt and freshly ground black pepper to taste. Serve immediately so the warm mushrooms provide contrast with the crisp greens.

For group office service: prepare components separately for transport—wash and dry greens; slice vegetables and store chilled; toast nuts and seeds and store in an airtight container; cook mushrooms and keep warm in a covered container; keep vinaigrette chilled. Assemble on-site and serve family-style in large bowls or a self-serve buffet. This recipe yields enough for a group package of approximately 8–10 servings.
