Make the marinade

In a medium bowl whisk together extra-virgin olive oil, fresh lemon juice, soy sauce, honey, and Dijon mustard until combined and slightly emulsified.

Add the minced garlic, grated ginger, chopped parsley, chopped dill (if using), smoked paprika, salt, black pepper, and red pepper flakes. Whisk again to distribute the aromatics evenly.

Taste and adjust: if the marinade is too sharp, add another 1/2 teaspoon honey; if it needs more acidity, add 1/2 teaspoon lemon juice. The final flavor should be balanced between bright (lemon), savory (soy and mustard), and a touch of sweetness.

Marinate Fish

Prepare fish

Pat fish fillets dry with paper towels. Place them in a shallow dish or resealable plastic bag in a single layer. If fillets are thick (over 1 inch), make 3–4 shallow diagonal slashes on the flesh to help penetration of the marinade.

Pour the prepared marinade over the fish, ensuring each fillet is coated. Reserve about 2 tablespoons of the marinade (set aside and do not return to bowl that touched raw fish) if you want to brush while grilling after boiling it for 1 minute to kill bacteria.

Cover and refrigerate. Marinate for 20–30 minutes for delicate fish (salmon, trout) or up to 45 minutes for firmer, thicker fillets (halibut, mahi-mahi). Do not exceed 1 hour for most fish to avoid texture change from acid.

Grill

Preheat grill

Preheat an outdoor grill or grill pan over medium-high heat (about 400–450°F / 200–230°C). Clean grates well and oil them lightly to prevent sticking.

Remove fish from the refrigerator 10 minutes before grilling to take the chill off and bring closer to room temperature. Brush both sides of each fillet lightly with the 1 tablespoon olive oil.

Place fillets on the grill presentation-side down (skin-side down if using skin-on). Close the lid and grill without moving for 3–5 minutes, depending on thickness: about 3 minutes for 1/2-inch fillets, 4–5 minutes for 1-inch fillets.

Check for release: the fish should lift easily when it has good grill contact. If it sticks, give it another 30–60 seconds. Using a thin spatula, carefully flip the fillets and grill for another 2–4 minutes until fish reaches an internal temperature of 125–130°F (52–54°C) for medium-rare to medium, or 140°F (60°C) for well done, and the flesh flakes easily with a fork.

Optional: If you reserved marinade and boiled it for 1 minute, brush a little onto the fillets during the last minute of grilling for an extra glaze.

Finish & Serve

Transfer grilled fish to a warm platter. Tent loosely with foil and let rest 2–3 minutes to redistribute juices.
