Slice and tenderize

Trim excess fat from the beef and slice across the grain into very thin strips (about 1/8–1/4 inch). If slices are uneven, partially freeze the beef for 30–45 minutes to firm it for cleaner slices.

Make the marinade

In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, allspice, cinnamon, black pepper, kosher salt, and red pepper flakes. Taste the marinade and adjust salt or lemon if needed.

Marinate the beef

Add the thinly sliced beef to the marinade, massaging the mixture so all pieces are coated. Cover and refrigerate for at least 4 hours, ideally overnight (8–12 hours) for best flavor and tenderness. For a same-day service, marinate at least 90 minutes.

Cook the beef

For large groups (office package) cook in batches: heat a large heavy skillet or griddle over medium-high heat and add 1–2 tablespoons neutral oil. Drain excess marinade from the beef, then add a single layer to the hot pan. Cook for 3–5 minutes, stirring and flipping occasionally, until browned and cooked through. Transfer cooked beef to a shallow tray and keep warm. Repeat with remaining beef, adding more oil as needed. Alternatively, cook on a preheated grill or under a broiler on high heat, turning to char edges for shawarma-style flavor.

Finish and rest

Once all beef is cooked, toss briefly with any resting juices and let rest 5 minutes so juices redistribute. Adjust seasoning with a pinch more salt or lemon if desired.

Prepare vegetables and garnishes

While beef marinates or cooks, slice tomatoes, cucumbers, and red onion thinly. Chop parsley and shred romaine. Arrange pickled turnips or pickles in a serving container. Place sauces (tahini/garlic and hot sauce) in squeeze bottles or bowls for easy distribution.

Warm the bread

Just before serving, brush pita or flatbreads lightly with melted butter or oil and warm on a hot skillet, grill, or oven for 1–2 minutes per side until pliable and slightly charred. Keep wrapped in a clean towel or foil to stay warm for service.

Assemble individual wraps (for service) or set up buffet

Option A — Pre-made group wraps: Lay a warmed pita flat, spread 1–2 tablespoons tahini or garlic sauce down the center, add about 4–5 ounces (115–140 g) of cooked beef, then top with tomatoes, cucumbers, red onion, shredded romaine, pickles, and a sprinkle of parsley. Fold and wrap in parchment or foil. Option B — Buffet/Build-your-own: Arrange warm pita, containers of beef (kept warm in chafing dishes or insulated trays), sauces, and vegetable bowls so guests assemble their own. Provide tongs and spoons. For office package portions estimate ~4–6 oz beef per person depending on appetite.

If delivering to an office, pack components to avoid sogginess: keep warm beef in sealed hot container; keep sauces and wet vegetables separate in small containers; wrap or stack bread in foil. Include utensils, napkins, and a small reheating instruction: reheat beef in a skillet for 3–4 minutes or microwave covered for 60–90 seconds, then assemble.
