Hummus Base

Method

Hummus Base

1

Prepare chickpeas

If using canned chickpeas, drain and rinse well. For extra-silky hummus (optional), peel skins from chickpeas by gently pinching each; this takes time but yields creamier texture.

2

Blend base ingredients

In a food processor, add drained chickpeas, tahini, lemon juice, garlic cloves, olive oil, cold water, and fine sea salt. Process on high for 1–2 minutes until the mixture becomes smooth, stopping to scrape down the bowl as needed.

BBQ Flavoring

3

Incorporate spices

With the processor running on low, add smoked paprika, ground cumin, light brown sugar, apple cider vinegar, soy sauce (or tamari), and minced chipotle in adobo (if using). Continue to process until fully incorporated and hummus is smooth and homogenous, about 30–60 seconds. Taste and adjust salt, acidity (more lemon or vinegar), or sweetness (more brown sugar) as needed.

4

Adjust texture

If the hummus is too thick, add additional cold water 1 tablespoon at a time and pulse until you reach a spreadable, scoopable consistency suitable for a group dip.

Finish & Garnish

5

Marble with BBQ sauce

Transfer hummus to a wide shallow serving bowl (good for office group sharing). Make a shallow well in the center with the back of a spoon and spoon the smoky BBQ sauce into the well. Using the back of the spoon, gently swirl the sauce into the top layer of hummus to create ribbons of BBQ flavor without fully mixing—this gives visual appeal and concentrated BBQ bites.

6

Garnish

Drizzle 1 tablespoon of extra-virgin olive oil over the hummus, sprinkle chopped parsley and toasted pine nuts or smoked almonds across the top, then finish with a light dusting of coarse smoked sea salt or flakey salt to taste.

For Serving (Group Package)

7

Arrange for group

Place the prepared hummus bowl on a sturdy platter. Surround with pita chips/toasted pita wedges and an assortment of fresh vegetable crudité arranged in sections for easy self-service. Provide small serving spoons and napkins for office use.

8

Storage and transport

If transporting to an office, keep hummus chilled in an insulated cooler. Keep garnishes (nuts, parsley, olive oil) separate until 10–15 minutes before serving to preserve texture. Refrigerate leftovers promptly and consume within 3–4 days.
