Roast the eggplants

Preheat oven to 425°F (220°C). Prick each eggplant several times with a fork to allow steam to escape. Place whole eggplants on a parchment-lined baking sheet. Roast for 35–45 minutes, turning once halfway through, until skin is charred and flesh is very soft and collapsing. Alternatively, roast over an open flame on a gas burner or grill for 15–20 minutes, turning until skins are blackened and flesh is soft. Remove from oven and let cool 15 minutes.

Drain and scoop

When cool enough to handle, cut each eggplant lengthwise and scoop the soft flesh into a fine-mesh sieve or colander set over a bowl. Let drain 10–15 minutes to remove excess liquid (press gently with the back of a spoon to accelerate). This prevents watery baba ghanoug.

Prepare aromatics and tahini

While eggplant drains, mince or crush garlic cloves to a paste (use a garlic press or finely mince and sprinkle with a pinch of salt, then press with the side of a knife). In a medium bowl combine tahini, lemon juice, crushed garlic, ground cumin, and 1 teaspoon of the kosher salt. Whisk until smooth; mixture may thicken — if very thick, add 1–2 tablespoons water to loosen.

Combine eggplant and tahini

Transfer drained eggplant flesh to a cutting board and chop roughly, or place in a bowl and mash with a fork for a chunkier texture; for a smoother dip, pulse 2–3 times in a food processor (do not over-process into a purée). Add the tahini mixture, 3 tablespoons (about 45 ml) olive oil, remaining 1/2 teaspoon salt, and black pepper. Stir (or pulse briefly) until combined and creamy. Taste and adjust seasoning — lemon juice, salt, or garlic as needed.

Finish and chill

Spoon baba ghanoug into a shallow serving bowl. Smooth the top and create a shallow well in the center. Drizzle the remaining 2 tablespoons olive oil over the dip, sprinkle smoked paprika, chopped parsley, and optional pomegranate seeds. Chill at least 30 minutes for flavors to meld (or serve immediately at room temperature).

Portion for office package

This recipe yields approximately 10–12 cups of baba ghanoug suitable for a group. Transfer to airtight serving trays or bowls for transport. If preparing ahead, store chilled up to 48 hours; bring to room temperature 30 minutes before serving and re-stir, adding a little extra olive oil or lemon if it has thickened.

Warm pita triangles briefly in a 350°F (175°C) oven for 5–7 minutes or wrapped in foil for transport. Arrange pita, cucumber slices, and baby carrots on platters around the dip. Provide serving spoons and small plates; label allergens (tahini = sesame). For office distribution, pack dip in covered containers (keep chilled with ice packs) and place garnishes separately to preserve appearance.
