Sift dry ingredients

Line a baking sheet or large bowl with a fine-mesh sieve. Sift the almond flour and 1.5 cups icing sugar together into the bowl. Repeat the sifting 2 times to remove lumps and ensure a fine, uniform mixture. Stir in the cardamom powder. Set aside.

Prepare meringue

Place 4 room-temperature egg whites into the bowl of a stand mixer fitted with the whisk attachment. Whisk on medium speed until foamy. Add 1/4 tsp cream of tartar and continue whisking. Gradually add the 3/4 cup granulated sugar in a slow, steady stream while increasing speed to high. Whisk until stiff, glossy peaks form (about 5–7 minutes). When the meringue holds firm peaks, add the 2 tbs castor sugar and whisk 10–15 seconds more. If using, add green gel food coloring and whisk briefly to achieve an even pale green color—do not overmix.

Macaronage (folding)

Add one-third of the sifted almond-sugar mixture to the meringue. Gently fold using a rubber spatula to deflate slightly. Add the remaining dry mixture in two additions, folding with a figure-eight motion. Continue folding until the batter flows like molten lava and when dropped from the spatula forms a ribbon that slowly dissolves back into the batter. The batter should be glossy, smooth, and just runny enough to settle within about 15–20 seconds.

Pipe shells

Fit a piping bag with a plain round tip (7–10 mm). Transfer batter to the bag. Pipe 1.5–2 inch rounds on parchment-lined or silicone baking mats, spacing 1 inch apart. Tap the tray firmly 2–3 times on the counter to release air bubbles. If bubbles remain on the surface, pop them with a toothpick.

Form shells

Let piped shells sit at room temperature for 30–60 minutes, until a dry skin forms on the surface and they are no longer tacky to the touch. This helps develop the characteristic macaron feet.

Bake

Preheat oven to 300°F (150°C). Bake one tray at a time on the middle rack for 14–16 minutes, rotating halfway through for even color. The shells should rise, form feet, and have a smooth top. Remove from oven and allow shells to cool completely on the baking sheet before removing. Cooling time ~30 minutes.

Yuzu Buttercream Filling

Beat butter

While shells cool, place 1 cup softened unsalted butter in a clean mixing bowl. Beat on medium-high speed with a paddle or whisk until light and pale, about 2–3 minutes.

Add sugar and flavor

Reduce speed to low and gradually add 2.5 cups icing sugar, about 1/2 cup at a time, to avoid a sugar cloud. After incorporated, add 3 tbsp yuzu juice, 1 tsp yuzu zest, 1 tbsp heavy cream, and 1/8 tsp sea salt. Increase speed to medium-high and beat until smooth and fluffy, about 2–3 minutes. Taste and adjust: add up to 1 tbsp more yuzu juice if you prefer brighter acidity, or another tablespoon of icing sugar if too loose.

Transfer to piping bag

Spoon the buttercream into a piping bag fitted with a small round tip or leave un-tipped for spreading. Chill briefly (10 minutes) if the buttercream becomes too soft to pipe.

Assembly & Finishing

Match macaron shells into similar-sized pairs. Pipe or spread approximately 1 tsp (about 10–12 g) of yuzu buttercream onto the flat side of one shell in each pair. Gently sandwich with the matching shell, pressing lightly to spread the filling to the edge but not squeeze it out.

Place assembled macarons in an airtight container lined in a single layer or separated by parchment sheets. For best texture and flavor, age the macarons in the refrigerator for 24 hours to allow the filling to meld with the shells, then bring to room temperature 30–60 minutes before serving. If serving immediately, allow at least 2 hours for flavors to settle.

Optional garnish: sprinkle a pinch of finely chopped dried yuzu peel on each macaron or apply a tiny edible gold leaf flake to the top center for an elevated presentation.
