Yuzu Citrus Syrup

Combine and heat
In a small saucepan combine 0.75 cups fresh yuzu juice (or reconstituted yuzu concentrate), 0.75 cups granulated sugar, and 0.25 cups water. Stir to dissolve sugar before applying heat.

Infuse (optional)
If using yuzu zest, add 1 tsp finely grated zest to the syrup in the last 1–2 minutes of heating to release oils. Remove from heat.

Cool and strain
Let the syrup cool to room temperature (10–15 minutes). If you added zest, strain through a fine-mesh sieve to remove zest and any pith. Transfer syrup to a clean jar. Syrup will keep refrigerated up to 2 weeks.

Combine wet ingredients
In a small bowl or jar, combine 0.25 cups of the prepared yuzu citrus syrup, 2 tbs rice vinegar, 1 tbs light soy sauce, 1 tsp sesame oil, and 2 tbs neutral oil.

Add aromatics and season
Whisk or shake in 0.5 tsp freshly grated ginger, 0.25 tsp salt, and 0.125 tsp black pepper until emulsified and uniform. Taste and adjust: add up to 1 tbs extra yuzu syrup for more brightness or 0.5–1 tsp more soy for saltiness.

Rest
Let the dressing rest 5–10 minutes at room temperature to allow flavors to meld. Shake briefly before using.
Assembly & Serving (optional)

For salad: Toss mixed greens or mizuna (about 4 cups) with the yuzu dressing to lightly coat (about 3–4 tbs dressing). Top with 2 tbs thinly sliced scallions, 1 tsp toasted sesame seeds, and microgreens if desired.

As glaze or finishing sauce: Brush warm yuzu syrup onto grilled fish or chicken in the final 1–2 minutes of cooking for a glossy citrus finish. Use remaining dressing as a dipping sauce or drizzle sparingly over steamed vegetables.

Storage: Keep any leftover yuzu syrup refrigerated up to 2 weeks and dressing refrigerated up to 1 week. Shake or whisk before using.
