Tea Base
Brew strong black tea
Bring 1 cup hot water just off boiling. Add 2 tsp loose black tea (or 2 tea bags) and steep 4–5 minutes for a strong concentrate. Strain or remove tea bags and measure out 2 cups of brewed tea. If your concentrate is stronger, top to 2 cups with hot water. Let tea cool slightly while you prepare other components.
Sweetener
Dissolve sugar in 2 tablespoons hot water to make a simple syrup. Stir until fully dissolved. Add the syrup to the brewed tea and taste; adjust sweetness if desired. Chill the sweetened tea in the refrigerator until cool (about 10–15 minutes) or briefly in an ice bath to speed cooling.
Egg Cocco (cream topping)
Prepare egg yolk mixture
Separate 2 large eggs and place yolks in a medium heatproof bowl. Whisk yolks briefly to smooth. Add sweetened condensed milk, vanilla extract and a pinch of salt and whisk until combined.
Temper and cook (optional safety step)
For food safety, temper the yolks: heat a small saucepan with 1/4 cup of the prepared sweetened tea until just warm (not boiling). Slowly drizzle about 2 tablespoons of the warm liquid into the yolk mixture while whisking constantly to raise temperature. Return tempered yolk mixture to the saucepan and cook gently over low heat, stirring constantly, until the mixture thickens slightly and reaches about 70–75°C (160–170°F) on an instant-read thermometer (about 3–5 minutes). Do not let it boil. Remove from heat and cool slightly.
Finish the cream
In a separate bowl, whip 1 cup heavy cream to soft peaks. Fold the cooled egg-yolk mixture into the whipped cream until smooth and homogenous. Taste and add more salt or a touch more condensed milk if you want it sweeter. Chill the egg coco cream for 10 minutes — it should be pourable but slightly thickened.
Assembly
Fill two serving glasses with ice cubes (divide the 1 cup between them). Pour the chilled sweetened tea over the ice, dividing evenly between the glasses.
Lightly dust with 1/2 teaspoon cocoa powder or grated dark chocolate for garnish, if using. Serve immediately with a straw or a small spoon to stir the cream into the tea.
