Citrus Cream Base

    Warm and dissolve

    In a medium saucepan, combine whole milk, heavy cream, granulated sugar, and a pinch of salt. Warm over medium-low heat just until the sugar dissolves and the mixture is steamy but not boiling (about 3–4 minutes). Stir frequently.

    Add condensed milk and flavor

    Remove the pan from heat. Stir in the sweetened condensed milk, orange juice, orange zest, and vanilla extract until fully incorporated. Taste and adjust sweetness with up to 1 additional tablespoon of sugar or condensed milk if desired. Let mixture cool to room temperature (about 20–30 minutes) or speed up by placing pan in an ice bath, stirring occasionally.

    Chill

    Once cooled to room temperature, cover and refrigerate the citrus cream base until thoroughly chilled, at least 1 hour. Chilling helps the mixture set faster during freezing.

Optional Coconut Core

    If using the coconut core alternative: in a small bowl combine shredded coconut, coconut milk, and powdered sugar. Mix until moist and slightly thickened. Let sit 10 minutes for the coconut to hydrate. Transfer to the refrigerator to keep cold until assembly.

Assembly & Flash-Freezing (Liquid Nitrogen)

    Prepare molds

    Work in a well-ventilated area with appropriate personal protective equipment (gloves, goggles). Place your popsicle molds on a stable tray. Spoon a thin layer (about 1–2 tablespoons for small molds, more for large) of the chilled citrus cream into the bottom of each mold.

    Add core

    If using sweetened condensed milk core: pour approximately 1 teaspoon (small) to 1 tablespoon (large) of sweetened condensed milk into the center of each mold on top of the first cream layer. If using the coconut core: place about 1 teaspoon of the prepared coconut mixture into each mold. The goal is a distinct core stripe through the center.

    Fill molds

    Top each mold with additional citrus cream, filling nearly to the rim and leaving about 1/4 inch headspace to allow for expansion. Smooth tops with a spoon. Insert popsicle sticks so they are centered and upright. If your molds have stick-holders, follow their instructions.

    Flash-freeze with liquid nitrogen (safety first)

    Place a large, heat-resistant stainless steel or aluminum bowl on a stable surface outdoors or in a well-ventilated area. Wearing cryogenic gloves and eye protection, slowly pour liquid nitrogen into the bowl—use only enough to create a 1–2 inch pool. Using long-handled stainless utensils, dip each filled mold into the liquid nitrogen briefly (3–8 seconds) to flash-freeze the exterior shell. Remove and set on a tray. Repeat until all molds have a frozen outer shell. Important safety notes: never handle liquid nitrogen with bare hands; avoid splashing; keep children and pets away; follow local regulations and supplier guidance.

    Deep-freeze to finish

    After the flash-freeze shell has formed, transfer the molds to a conventional freezer at -18°C (0°F) or colder to complete freezing for at least 2 hours (3–4 hours for larger molds). This ensures the core freezes solid without becoming overly icy.

    Unmold and garnish

    To unmold, briefly run warm (not boiling) water over the outside of the mold for 5–10 seconds, rotating to loosen. Gently pull the popsicle out by the stick. If needed, use a small knife to free edges. Sprinkle each creamsicle with a little grated orange zest for garnish and serve immediately.
