Prepare brownie pieces

If using a whole brownie, cut into 8 even squares about 1 to 1¼ inches thick. If the brownies are very soft or warm, chill in the refrigerator for 30–45 minutes so they hold shape during coating and frying. Lightly dust a work surface with 1–2 tablespoons flour to prevent sticking.

Set up dredging station

Place 1 tablespoon flour in a shallow dish. Beat 2 eggs in a second shallow bowl until blended. In a third shallow bowl combine 1½ cups panko breadcrumbs, ¾ cup shredded unsweetened coconut, 1 teaspoon sugar (optional) and 1/4 teaspoon fine salt; mix thoroughly.

Coat the brownies

Working one piece at a time, lightly dredge a chilled brownie square in the flour, shaking off excess. Dip into the beaten egg, ensuring all sides are coated. Press into the panko-coconut mixture, turning and pressing so the crumbs adhere well. For an extra-thick crust, repeat the egg dip and panko press once more. Place coated pieces on a parchment-lined tray and refrigerate for 15–20 minutes to set the coating; this helps prevent breakdown in hot oil.

Heat oil

Pour about 3 cups neutral oil into a medium saucepan or deep skillet to a depth of ~1½–2 inches. Heat over medium heat until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a few crumbs — they should sizzle and turn golden within ~30 seconds.

Fry the brownies

Working in batches (2–3 pieces at a time depending on pan size), carefully lower chilled coated brownies into the hot oil using a slotted spoon or spider. Fry about 40–60 seconds per side, turning once, until the crust is golden brown and crisp. Total fry time is short because the interior is already baked—avoid overcooking. If oil temperature drops, raise heat slightly; if browning too fast, lower heat. Transfer fried brownies to a wire rack set over a baking sheet or paper towels to drain briefly.

Finish

If desired, dust fried brownies lightly with 1 teaspoon powdered sugar while still warm. Let rest 1–2 minutes so crust firms up and center remains fudgy but not molten.

To serve

Place one warm fried brownie on each serving plate. Top with one scoop of green tea (matcha) ice cream alongside or on top of the brownie (the cold ice cream contrasts the warm crust). Garnish with mint leaves if using. Serve immediately so the crust stays crisp and the ice cream provides a creamy, chilled contrast.
