Sticky Coconut Black Rice

Soak the rice

Rinse 1 cup black rice under cold water until the rinse runs clear. Transfer to a bowl and cover with 2 cups water. Soak 3–6 hours or overnight to shorten cooking time and improve texture. Drain and set aside.

Cook the rice

Place the drained black rice in a medium saucepan with 1 1/2 cups fresh water and 1/2 cup coconut milk. Bring to a gentle boil over medium-high heat, then reduce to low, cover, and simmer 25–30 minutes until the rice is tender and most liquid is absorbed. If rice is still firm and liquid is absorbed, add up to 2–4 tbs water, cover and continue cooking 5–7 minutes.

Sweeten and finish

When rice is cooked, remove from heat. Stir in the remaining 1/2 cup coconut milk, 3 tablespoons sugar, 1 teaspoon salt, and 1 teaspoon vanilla (if using). Mix gently until sugar dissolves and rice becomes glossy and sticky. Cover and let rest 10 minutes to thicken. Taste and adjust sugar/salt.

If you prefer a firmer chilled presentation, spread the warm rice in a shallow tray, cover, and chill 30–60 minutes before serving; for warm service, keep covered until assembling.

Coconut Panko (crispy topping)

Prepare panko-coconut mix

In a small bowl combine 3 tablespoons panko, 3 tablespoons sweetened shredded coconut, and 1 tablespoon unsweetened shredded coconut. Stir to blend the textures.

Pan-fry until golden

Heat 2 tablespoons neutral oil in a small skillet over medium heat. When oil is hot (it will shimmer), add the panko-coconut mixture in an even layer. Stir continuously or toss gently so it browns evenly. Fry 3–5 minutes until the panko turns golden brown and the shredded coconut is toasted — watch closely to avoid burning.

Remove skillet from heat and immediately season with a pinch of fine sea salt. Transfer the crispy coconut panko to a paper-towel-lined plate to drain and cool; it will crisp further as it cools.

Assembly & Serving

Plate the rice

Spoon warm or chilled sticky coconut black rice into individual bowls or small molds, pressing lightly to compact for a neat shape if desired.

Add coconut panko

Sprinkle 1–2 tablespoons of the crispy coconut panko over each portion of rice, concentrating it on one side or across the top for contrast.

Garnish and finish

Drizzle a little warmed coconut milk (about 1 tablespoon per serving) around or over the rice, scatter 1/4 teaspoon toasted sesame seeds, add optional mango slices or other fruit, and finish with a tiny pinch of lime zest if using. Serve immediately so the panko stays crisp.
