Prep bananas
Peel the bananas and cut each banana in half lengthwise. If bananas are very large, quarter them lengthwise so pieces are roughly bite-sized and cook evenly.

Toast nuts
Place the chopped pecans or walnuts in a small dry skillet over medium-low heat. Toast, stirring frequently, until fragrant and lightly browned, about 2–3 minutes. Transfer to a small bowl and set aside to prevent burning while you make the sauce.

Make caramel glaze
In the same skillet, melt the unsalted butter over medium heat. Once foaming subsides, add the light brown sugar and stir constantly until the sugar dissolves and mixture becomes smooth, about 1–2 minutes. Stir in the maple syrup, lime juice, ground cinnamon, and a pinch of sea salt. Cook the glaze for another 30–45 seconds until it thickens slightly and becomes glossy.

Cook bananas
Reduce heat to medium-low. Add the banana halves to the skillet, cut-side down if halved lengthwise, arranging them in a single layer. Cook without moving for 1–2 minutes to get a light caramelization, then gently flip each piece with a spatula and cook the other side for 30–60 seconds, spooning glaze over the tops so they become evenly coated.

Serve
Transfer bananas to a warm platter and spoon any remaining glaze from the skillet over them. Serve immediately as a side for grilled pork, fried chicken, or alongside scrambled eggs and toast as a sweet-savory breakfast side. Leftovers can be kept in an airtight container in the refrigerator for up to 2 days; reheat gently in a skillet or microwave until warmed through.
