Prepare and preheat
Preheat oven to 350°F (175°C). Lightly grease an 8x8-inch (or 9-inch round) baking pan and line with parchment leaving an overhang for easy removal.

In a medium bowl, mash the ripe bananas until mostly smooth with a few small lumps remaining; measure 2 cups mashed bananas and set aside.

In a large bowl, whisk together all-purpose flour, baking powder, baking soda, and salt until evenly combined.

In a separate bowl, whisk the eggs with granulated sugar and brown sugar until sugars begin to dissolve and mixture is slightly foamy (about 1 minute). Stir in the melted butter (or oil), milk, and vanilla extract until combined.

Fold the mashed bananas into the wet mixture. Pour the wet ingredients into the dry ingredients and gently fold just until incorporated—do not overmix. Batter will be thick and moist.

Fold in half of the thin banana slices (about 1/4 cup) into the batter if you want banana pieces inside the cake.

Transfer batter to prepared pan and smooth the top. Arrange remaining banana slices over the top in a single layer if desired.

Savory Coconut Sauce

While the cake bakes or cools, prepare the savory coconut sauce. In a small saucepan over medium heat, add the minced garlic and ginger with 1 teaspoon neutral oil and gently cook for 30–45 seconds until fragrant. Do not brown.

Add the coconut milk to the pan and bring to a gentle simmer. Stir in granulated sugar, soy sauce (or fish sauce), and optional fish sauce if using. Reduce heat to low and simmer gently for 6–8 minutes, stirring occasionally, until slightly thickened and glossy—sauce should coat the back of a spoon.

Taste and adjust seasoning with lime juice, salt and black pepper. The finished sauce should be balanced: mildly sweet, savory (umami) and slightly tangy. Keep warm on the lowest heat while the cake cools; if it separates, whisk briefly to re-emulsify.
Finishing & Serve

Toast the shredded coconut in a small dry skillet over medium heat, stirring frequently, until golden and fragrant, about 2–3 minutes. Remove from heat and set aside.

Slice the cooled banana cake into squares or wedges. Place a slice on a serving plate and spoon 1–3 tablespoons of warm savory coconut sauce over or beside each slice (adjust to taste).

Garnish with toasted shredded coconut, additional thin banana slices, a small sprinkle of lime zest, and optional fresh cilantro or mint leaves for a bright contrast.

Serve immediately while sauce is warm. Leftover sauce can be refrigerated for 2–3 days and gently reheated. Cake keeps covered at room temperature for 1 day or refrigerated up to 3 days.
