Prepare the Ingredients

Chop the onion, mince the garlic, and grate the ginger. Cut the beef into chunks if not already done.

Sauté the Aromatics

In a large pot or tagine, heat olive oil over medium heat. Add the chopped onion and cook until translucent. Stir in minced garlic and grated ginger, cooking for another minute.

Brown the Beef

Increase the heat to medium-high and add the beef chunks. Season with salt and pepper. Brown the beef on all sides.

Add Spices and Broth

Stir in cumin, cinnamon, turmeric, and paprika. Cook for 1-2 minutes until fragrant. Pour in the beef broth and bring to a simmer.

Simmer

Reduce heat to low, cover, and let simmer for 2-3 hours, or until the beef is tender. Stir occasionally and add water if necessary.

Add Prunes

About 30 minutes before serving, stir in the chopped prunes. Adjust seasoning with salt and pepper as needed.

Serve

Serve the beef tagine warm with your choice of pita bread or rice.
