Brewing Directions for Flying Horse Royal Lager

1. Mashing

In a large pot, heat 5 liters of water to about 165°F (74°C). Add the pale malt and caramel malt to the water, stirring well. Maintain the temperature between 150°F to 155°F (65°C to 68°C) for 60 minutes.

2. Sparging

After mashing, sparge the grains with hot water to collect the wort, which should be around 3-4 liters.

3. Boiling

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the aroma hops in the last 15 minutes of boiling.

4. Cooling

After boiling, cool the wort quickly to around 70°F (21°C) using a wort chiller or an ice bath.

5. Fermentation

Transfer the cooled wort to a sanitized fermentation vessel and add the yeast. Seal the vessel with an airlock and let it ferment at a temperature of around 50°F (10°C) for 2-3 weeks.

6. Bottling

After fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the fermented beer. Bottle the beer in sanitized bottles and cap them.

7. Conditioning

Allow the bottles to condition at room temperature for 1-2 weeks before refrigerating.
