1. Prepare pot
Place a medium saucepan on the stove and add 4 cups of water. Add 1 tablespoon kosher salt to the water and bring it to a rolling boil over high heat.
2. Cook edamame
Add 1 cup of edamame in pods to the boiling salted water. Return to a boil, then reduce the heat slightly so the water maintains a steady boil. Cook for 3 to 5 minutes for fresh edamame, or 4 to 6 minutes for frozen (cook until pods are bright green and tender but still slightly firm).
Finishing & Serving

While still warm (or after draining if chilled), transfer the edamame to a bowl. Drizzle 1 teaspoon toasted sesame oil over the pods and toss gently to coat.
5. Salt and optional seasonings
Sprinkle 1 teaspoon coarse sea salt (or flaky salt) evenly over the pods. If desired, add up to 1 teaspoon freshly ground black pepper and 1/4 teaspoon crushed red pepper flakes for heat. Toss to distribute seasonings.
6. Finish and serve
If you like a citrus note, squeeze a little lemon or yuzu over the edamame (to taste). Serve immediately while warm, or chill and serve cold as an appetizer. Eat by squeezing the beans from the pods with your teeth—do not eat the pods.
