Vegetables and Vinegar Brine

Prepare the Vegetables

Wash and chop the carrots, cauliflower, celery, and bell peppers into bite-sized pieces.

Make the Brine

In a saucepan, combine white vinegar, water, salt, red pepper flakes, black peppercorns, and bay leaves. Bring to a boil over medium heat, stirring until salt dissolves.

Pack the Jar

In a sterilized jar, layer the chopped vegetables and sliced garlic. Pour the hot brine over the vegetables, ensuring they are fully submerged.

Add Olive Oil

Once the jar has cooled slightly, add olive oil to the top of the jar to create a seal.

Seal and Store

Seal the jar tightly and allow it to cool to room temperature. Store in the refrigerator for at least 24 hours before serving for the best flavor.
