Combine dairy and dry ingredients
In a medium saucepan, whisk together 2 cups whole milk, 1 cup heavy cream, 3 tablespoons granulated sugar, and 2 tablespoons powdered milk (if using) until smooth. Add 1 tablespoon corn syrup if using. Heat the mixture over medium heat until it reaches a gentle simmer (steam rising, small bubbles at edges), about 5–7 minutes. Do not boil.

Temper egg yolks
While the milk is warming, whisk 3 pasteurized egg yolks in a medium bowl until smooth. Slowly ladle about 1/3 cup of the hot milk mixture into the yolks in a thin stream while whisking constantly to temper and raise the yolks' temperature. Repeat with another 1/3 cup. This prevents scrambling.

Cook custard
Pour the tempered yolk mixture back into the saucepan with the remaining milk mixture. Cook over low–medium heat, stirring constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon (an instant-read thermometer should register 170–175°F / 77–80°C). Do not boil.

Finish and flavor
Remove from heat. Stir in 2 teaspoons vanilla extract and a pinch of fine sea salt. If making chocolate or fruit variations, whisk in 2 tablespoons cocoa powder (for chocolate) while warm, or fold in 1/2 cup fruit purée after cooling slightly (for fruit flavors).

Optional gelatin (stabilizer)
If using gelatin, sprinkle 1/2 teaspoon gelatin over 1 teaspoon cold water and let bloom 3–5 minutes. Warm gently (microwave 5–8 seconds or over a small saucepan) until dissolved and stir into hot custard until fully incorporated.

Chill thoroughly
Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits or undissolved cocoa. Cover the surface with plastic wrap to prevent a skin and refrigerate until fully cold, at least 4 hours or ideally overnight. Proper chilling improves texture and freezing behavior.

Churn in soft-serve machine or ice cream maker
Once the base is thoroughly chilled, follow your soft-serve machine manufacturer's instructions. For countertop soft-serve machines, pour the cold custard into the hopper and freeze according to machine times (typically 20–40 minutes) until the mixture reaches a soft-serve consistency. For a regular ice cream maker, churn until thick but still pourable, then transfer to machine freezer barrel or use the soft-serve function if available.

Serve and store
Dispense the soft-serve directly from the machine into cones or cups. Soft-serve is at its best immediately. If you need to hold it, keep the machine at the recommended low serving temperature. Leftovers can be transferred to an airtight container and softened in the refrigerator for 10–20 minutes before scooping; texture will firm more than machine-dispensed product.

Chocolate variation: Whisk 2 tablespoons unsweetened cocoa powder into the warm custard during the 'Finish and flavor' step. Taste and add up to 1 additional tablespoon sugar if you prefer it sweeter.

Fruit variation: Stir in 1/2 cup smooth fruit purée after removing custard from heat and let cool. For best results, gently fold the purée into the chilled base before churning to maintain even color and texture.

Using gelatin or powdered stabilizer: If using 1/2 teaspoon gelatin as described above, the soft-serve will hold shape slightly longer and be a bit smoother. Alternatively, use a commercial ice cream stabilizer per package instructions, dissolving it into the warm milk before tempering the yolks.
