    Inspect & Rinse

    Keep oysters cold until just before shucking. Inspect each oyster and discard any with cracked or open shells that do not close when tapped. Rinse the exterior of the shells under cold running water to remove grit and debris.

    Prepare Work Area

    Line a sturdy surface with a folded kitchen towel to stabilize shells. Have a second towel or glove to hold the oyster, the oyster knife in your dominant hand, and a small bowl nearby for any liquid you need to discard. Keep a bowl of cold water nearby to rinse hands if needed.

    Shuck Oysters

    Hold the oyster cup (deeper shell) down and hinge facing you. Insert the oyster knife at the hinge and twist gently until you feel the shell pop. Slide the knife along the top shell to cut the adductor muscle and lift off the top shell, keeping as much liquor (natural oyster juice) in the cup as possible. Run the knife under the oyster to free the bottom adductor muscle, leaving the oyster resting in the cup. Wipe any shell fragments from the rim.

    Arrange on Ice

    Spread the crushed ice across the serving platter to form a level bed. Nestle each shucked oyster (in its deep shell) on the ice, arranging them in rows so they sit level and won’t spill their liquor. Continue until all oysters are arranged. Keep the platter on ice in the refrigerator if not serving immediately; do not leave oysters at room temperature for more than 30 minutes.

    Make Mignonette (if preparing fresh)

    In a small bowl combine 1/2 cup red wine vinegar, the finely minced shallot, 1/2 tsp coarse sea salt, and 1/4 tsp freshly ground black pepper. Stir and let sit at least 10 minutes to mellow; refrigerate until ready to serve. Taste and adjust salt or vinegar balance as desired.

    Prepare Lemon & Sauces

    Cut the lemons into wedges (yielding about 12–16 wedges from 2 lemons). Transfer cocktail sauce and prepared horseradish to small bowls. Place hot sauce in a small bottle or bowl for guests. Grind a little extra black pepper into a dish for optional finishing. Place parsley or microgreens in a bowl or lightly scatter them on the ice for a finishing touch.

    Set Up Service Station

    Place the platter of oysters on ice in the center of the table or service area. Surround with small bowls containing mignonette, cocktail sauce, horseradish, hot sauce, lemon wedges, and a dish of cracked black pepper. Provide small spoons for the mignonette and cocktail sauce. Supply extra napkins and discard bowls for shells if guests will shuck their own.

    Serve

    Encourage guests to tip a small amount of sauce or a squeeze of lemon onto each oyster, then slurp the oyster and its liquor from the shell. Recommend tasting oysters plain first to appreciate the natural flavor, then try with different condiments. Keep unused oysters chilled on ice and consume within 2 hours of shucking for best quality.
