Method

Prep & Cook Lobster

    If using live lobster

    Bring a large pot of heavily salted water to a rolling boil. Plunge the lobster into the pot headfirst and cook 7–9 minutes for 1.25–1.5 lb lobster (crank timing by size). Remove and immediately transfer to an ice bath to stop cooking. When cool, remove tail and claws, crack shells and extract meat. Coarsely chop tail and claw meat into large bite-size pieces. Reserve shells for stock if desired.

    If using pre-cooked lobster meat

    Keep meat chilled and only warm briefly in the finished stew to avoid overcooking.

    Pat lobster meat dry and toss with 1 tbs melted butter; set aside refrigerated until ready to finish in the stew.

Broth & Base

    In a 4–5 quart pot or Dutch oven, melt 2 tbs unsalted butter over medium heat until foaming.

    Add the diced yellow onion and a pinch of salt; sauté 5–6 minutes until translucent and beginning to soften.

    Stir in minced garlic and grated ginger; cook 30–45 seconds until aromatic but not browned.

    Add 2 tbs green curry paste and cook, stirring constantly, 1–2 minutes to bloom the spices and reduce raw edge.

    Pour in 1 cup dry white wine to deglaze the pan, scraping any fond; simmer 2–3 minutes until reduced by roughly half.

    Add 3 cups low-sodium seafood or chicken stock and bring to a gentle simmer.

    Stir in 2 cups unsweetened coconut milk, 1 tbs fish sauce, 2 tbs fresh lime juice, 1 tsp light brown sugar, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Simmer gently 5 minutes to marry flavors. Taste and adjust seasoning—add up to 1/2 tbs more fish sauce or a pinch more salt if needed.

Maitake & Vegetables

    While broth simmers, heat a medium skillet over medium-high heat and add a drizzle (about 1 tbs) of neutral oil if desired. Add the torn maitake mushrooms and sauté 3–4 minutes until browned and slightly crisp at the edges. This step concentrates mushroom flavor; transfer to a paper towel-lined plate.

    Add the julienned carrot and sliced fennel to the simmering broth and cook 2–3 minutes until just tender-crisp.

    Stir the sautéed maitake into the broth along with the chopped baby bok choy or spinach and the white parts of the scallions. Simmer 1–2 minutes until greens are wilted and mushrooms warmed through.

Finish & Thicken (optional)

    If you prefer a slightly thicker stew, mix 1 tsp cornstarch with 1 tbs cold water to make a slurry. Whisk the slurry into the simmering broth and cook 1–2 minutes until the broth slightly thickens. Skip this step for a lighter, more brothy stew.

Add Lobster & Finish

    Reduce heat to low. Gently add the prepared lobster meat to the pot and warm 1–2 minutes—just enough to heat through without overcooking. If lobster was reserved in shell, you may warm shells in the broth for extra flavor then remove before adding meat.

    Stir in 1 tbs unsalted butter and taste for final seasoning. Adjust lime, fish sauce, or salt as desired.

Garnish & Serve

    Ladle the stew into warmed bowls. Top with torn Thai basil leaves, chopped cilantro, sliced scallion greens, and optional sliced red chili or microgreens.

    Serve immediately with lime wedges on the side for extra brightness. Provide crusty bread or steamed jasmine rice if desired.
