Cocktail
Method
Cocktail
Prepare glass
Chill a double old-fashioned glass or tiki mug by filling it with ice water while you mix the drink. Alternatively, fill the glass with crushed ice and set aside.
Build and shake
Discard the ice water from the chilled glass. In a cocktail shaker, add the light rum, aged dark rum, fresh lime juice, orange curaçao, orgeat, simple syrup, and two dashes of Angostura bitters. Fill the shaker with ice (preferably crushed or cubed), secure the lid and shake vigorously for 10–15 seconds until well chilled.
Assemble
Fill the prepared glass with fresh crushed ice. Strain the shaken mixture over the crushed ice, using a fine strain if you want to remove tiny shards.
Float dark rum (optional)
If you prefer the classic layered look and aroma, carefully pour (float) 0.25–0.5 oz aged dark rum over the back of a spoon so it sits on top of the drink. (Note: this uses an extra 0.25–0.5 oz rum; the recipe above already includes 1 oz dark rum — skip the float or reduce the dark rum in the shake if you want the float.)
Garnish and serve
Garnish with a fresh mint sprig (slap the mint between your palms to release aroma) and a lime wheel or wedge. Insert a straw off to the side so you can smell the mint when sipping. Serve immediately.
