    Prepare lobster meat

    If lobster is refrigerated and in large chunks, pat dry with paper towels and roughly chop into 1/2-inch pieces. Measure out 1 cup. Using claw and knuckle meat gives the best texture and flavor.

    In a medium bowl combine the chopped lobster, 3 tablespoons mayonnaise, 2 tablespoons finely chopped celery, 1 tablespoon chopped chives, and 1 tablespoon fresh lemon juice. Fold gently so you do not break up the meat.

    Season the mixture with 1 teaspoon fine sea salt, 1 teaspoon freshly ground black pepper and, if using, a 1/4 teaspoon pinch of cayenne or a few drops of hot sauce. Taste and adjust salt and lemon — the lobster should be bright but not overdressed. Cover and refrigerate while you brown the butter and toast the rolls (15–20 minutes).

Brown Butter, Toast & Finish

    Brown the butter

    In a small stainless-steel or light-colored skillet over medium heat, add 4 tablespoons unsalted butter and 1 teaspoon neutral oil (optional; stabilizes butter at higher heat). Melt the butter, then continue to cook, swirling or stirring frequently. After 3–5 minutes the butter will foam, then the foam will subside and solids will begin to brown and smell nutty. Watch closely — once the solids are golden brown and the aroma is fragrant, remove the pan from heat immediately to prevent burning. Let the butter cool 1–2 minutes; reserve a little (about 1 tablespoon) to drizzle over the lobster at the end and use the rest for toasting rolls.

    Toast the rolls

    Split the 4 rolls but keep the bottoms attached (split-top). Brush the cut surfaces with the browned butter (use remaining browned butter). Heat a heavy skillet or griddle over medium heat. Place rolls cut-side down and toast 1–2 minutes until golden brown and crisp. Press slightly with a spatula for even contact. Remove and keep warm.

    If you prefer, you may briefly warm the lobster in the cooled brown butter for 10–15 seconds in the skillet to pick up flavor—do not overcook (optional).

    Assemble the rolls: divide the chilled lobster filling into 4 equal portions and pile into the toasted rolls. Drizzle about 1/4 tablespoon of the reserved brown butter over each portion of lobster to add gloss and nutty flavor.

    Garnish each roll with a sprinkle of flaky sea salt (about a pinch per roll) and a scattering of finely chopped parsley. Serve immediately with lemon wedges on the side for squeezing.
