Prepare ice bed and oysters
Pack a large shallow platter with crushed ice to create a stable, chilled bed for the oysters. Arrange the shucked oysters on the half shell evenly over the ice so they sit level and won't tip.
If oysters are not already shucked: scrub shells under cold water, hold oyster with a towel, insert an oyster knife at the hinge, twist to pop hinge, run blade under top shell to cut adductor, remove top shell, cut under oyster to free from bottom shell, and transfer to ice. Discard any oysters that have an off smell.
Mediterranean Dressing
Make the dressing
In a small bowl or jar combine extra-virgin olive oil (3 tbs), fresh lemon juice (1 tbs), and white wine vinegar (1 tsp). Whisk or shake until emulsified.
Add finely minced shallot (1 tbs), chopped parsley (2 tbs), chopped basil (1 tbs), chopped capers (1 tsp), diced sun-dried tomato (2 tsp), and red pepper flakes (1 tsp) to the oil-lemon mixture. Stir to combine so herbs and aromatics are evenly suspended in the dressing.
Season the dressing with sea salt (1 tsp) and freshly ground black pepper (1/2 tsp). Taste and adjust: add a touch more lemon juice if you want brighter acidity or a pinch more salt if flavors seem muted.
Let the dressing rest for 5–10 minutes at room temperature to allow the shallot to soften and flavors to meld. Stir once more before using.
Assembly & Garnishes
Dress the oysters
Using a small spoon, place approximately 1 teaspoon of the Mediterranean dressing on each oyster. Aim to lightly coat the oyster without drowning it — you want the briny flavor to remain central.
Optionally, serve toasted baguette slices on the side. Provide additional lemon wedges and any extra dressing in a small bowl for guests who want more.
