    Preheat the oven to 350°F (175°C). Lightly grease a 9-inch (23 cm) springform pan or line the bottom with parchment paper.

    Combine the graham cracker crumbs, granulated sugar and salt in a medium bowl. Pour in the melted butter and stir until all crumbs are evenly moistened and hold together when pressed.

    Press and bake

    Press the crumb mixture evenly into the bottom (and slightly up the sides if desired) of the prepared pan using the back of a measuring cup or a flat-bottomed glass. Bake for 8–10 minutes until fragrant and set. Remove from oven and let cool while you prepare the filling.

Filling

    Reduce oven temperature to 325°F (160°C) if you plan to bake the assembled dessert briefly; otherwise you can chill. For a light, creamy no-bake finish, refrigeration is sufficient.

    In a large bowl, beat the room-temperature cream cheese and mascarpone with a hand mixer or stand mixer on medium speed until smooth and lump-free, about 2–3 minutes. Scrape down the bowl as needed.

    Add the powdered sugar, vanilla extract, lemon zest and salt. Beat on low speed until incorporated, then increase speed for 20–30 seconds to smooth the filling. Taste and adjust sweetness or lemon zest as desired.

    In a separate chilled bowl, whip the cold heavy cream to soft peaks. Fold one-third of the whipped cream into the cheese mixture to loosen it, then gently fold in the remaining whipped cream until uniform and airy—do not overmix.

    Assemble

    Spoon the filling over the cooled crust, spreading evenly and smoothing the top with an offset spatula. Tap the pan gently on the counter to release any air pockets.

    Chill the assembled dessert in the refrigerator at least 4 hours, preferably overnight, to firm the filling. If you prefer a baked set, place the assembled pan in the 325°F (160°C) oven and bake for 15–18 minutes until the edges are slightly set and center still slightly jiggly; cool to room temperature then chill for 2 hours.

Topping

    If using whole strawberries, hull and slice larger berries so fruit is bite-sized. Combine the berries in a bowl and toss gently with the lemon juice.

    Warm the berry jam or coulis briefly in the microwave or on the stovetop just until liquid (about 10–15 seconds in microwave). Spoon the warmed jam over the berries and toss gently to coat—this lightly glosses the fruit and helps preserve color.

    When the filling has set, arrange the glazed berries evenly over the top of the dessert. Leave a small border of filling visible if you prefer a framed look.

    Garnish with fresh mint leaves and dust very lightly with powdered sugar if desired. Keep chilled until ready to serve.

    Run a thin knife around the pan edge to loosen, then release the springform ring. Slice with a hot, dry knife (wipe between cuts) into 8–10 slices. Serve chilled; leftovers keep covered in the refrigerator for up to 3 days.
