Chill glass

Place the pousse-café or cordial glass in the freezer for 5–10 minutes before assembling to help keep layers distinct.

Order the liqueurs

Arrange the liqueurs in order of increasing specific gravity (densest first). A reliable order for the listed liqueurs is: grenadine (densest), crème de cassis, maraschino, blue curaçao, yellow Chartreuse, green Chartreuse, brandy (lightest). Note: densities vary by brand; if unsure, test with small drops.

Add the base layer (grenadine)

Remove the chilled glass from the freezer. Using the back of a bar spoon or a dropper, gently pour 1/2 tablespoon of grenadine into the bottom of the glass. Let it settle; avoid tilting the glass.

Layer crème de cassis

Place the tip of the spoon just above the surface of the grenadine with the convex side up. Slowly pour 1/2 tablespoon of crème de cassis over the back of the spoon so it gently flows and forms a separate layer. Wait a few seconds for it to settle.

Layer maraschino

Using the spoon technique (or dropper), very slowly add 1/2 tablespoon maraschino liqueur on top of the crème de cassis. Keep movements steady and pour onto the spoon to prevent mixing.

Layer blue curaçao

Slowly add 1/2 tablespoon of Blue Curaçao using the spoon/droplet method to form the next distinct band. Pause briefly after pouring to allow separation.

Layer yellow Chartreuse

Gently pour 1/2 tablespoon Yellow Chartreuse over the spoon, keeping the pour slow and close to the liquid surface so the layer doesn't break through.

Layer green Chartreuse

Add 1/2 tablespoon Green Chartreuse using the same slow spooning method. Because some Chartreuses are denser than others, pour carefully and watch the interface between colors.

Top with brandy

Finish with 1/2 tablespoon of brandy poured slowly over the spoon to form the top, lightest layer. The drink should display multiple distinct horizontal bands of color.

Garnish & serve

Garnish with a Luxardo or cocktail cherry perched on the rim or gently placed on top if it fits without disturbing layers.

Serve immediately as an after-dinner sipper. Instruct guests to sip slowly so they experience the layered flavors; if preferred, provide a small spoon to gently stir if they want a blended taste.

Cleanup note: if layers begin to blend, pour out and start again — precise, slow pouring and chilled glass are key to success.
