- 1
Prepare glass
Chill a rocks glass in the freezer or fill it with ice water while you prepare the cocktail. If using, place a large ice cube or sphere in the glass and set aside.
- 2
Measure and combine
In a cocktail shaker, add 2 oz aged rum (or whiskey), 0.5 oz dry curaçao, 0.5 oz amaro, 0.75 oz fresh lemon juice, 0.25 oz simple syrup, 2 dashes orange bitters, and 1 dash Angostura bitters.
- 3
Add ice and shake
Fill the shaker about two-thirds full with ice. Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker is well-chilled and slightly frosted. This briefly chills and dilutes the mixture for balance.
- 4
Strain
Discard the ice or water from the chilled rocks glass if you used that method. Double-strain the cocktail into the prepared glass over the large ice cube or sphere using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and bits of pulp.
- 5
Finish and garnish
Express the oils from an orange peel over the drink by holding the peel skin-side down about 3–4 inches above the surface and giving it a quick sharp bend so the oils spray onto the cocktail. Rub the peel around the glass rim and drop it into the drink as a garnish.
- 6
Serve
Serve immediately. Sip slowly to appreciate the layered notes of spirit, citrus, and gentle amaro bitterness.
