    Combine and chill

    Fill a cocktail shaker with ice. Add 1.5 oz gin, 0.5 oz dry vermouth, 0.5 oz elderflower liqueur, 0.5 oz fresh lemon juice and 0.25 oz simple syrup to the shaker.

    Shake

    Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted. This both chills and dilutes the base mixture.

    Strain

    Double-strain the mixture into a chilled champagne flute or a coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp.

Sparkling

    Top the strained base with about 3 oz dry sparkling wine. Pour slowly down the side of the glass to preserve bubbles and avoid excessive foaming.

Garnish & Serve

    Express a lemon twist over the surface of the drink to release oils, then drop it into the glass. Optionally float an edible flower or a small sprig of thyme on top for aroma and presentation.

    Serve immediately while the sparkling wine is lively. Provide a small cocktail napkin; one cocktail per serving.
