Method

Preparation

  1. 1

    Heat water

Bring 4 cups of fresh cold water to a gentle boil in a kettle or saucepan. If using black tea, bring to a full boil (212°F / 100°C). For a purely herbal infusion, bring water to a boil then let it cool slightly (to about 200°F / 93°C) before pouring over chamomile to preserve delicate aromatics.

  2. 2

Steep chamomile (and optional black tea)

Place 2 tablespoons dried chamomile flowers (and 1 teaspoon loose black tea, if using) into a heatproof teapot or a heatproof pitcher. Pour the hot water over the herbs/tea. Cover and steep: steep chamomile 5–7 minutes for full floral flavor; if black tea is included, limit total steep time to 4–5 minutes to avoid excessive bitterness. If both are used, aim for a 4.5–5 minute steep and taste for desired strength.

  3. 3

    Strain

After steeping, strain the infusion through a fine mesh sieve or tea strainer into a clean pitcher or teapot to remove the chamomile flowers (and tea leaves). Press gently on the solids with a spoon to extract more liquid without forcing bitterness.

Finish & Serve

  1. 4

    Add lemon and sweetener

While the tea is still warm, stir in 2 tablespoons fresh lemon juice and 2 teaspoons honey or simple syrup. Taste and adjust: add up to 1 additional teaspoon sweetener or more lemon juice if you prefer brighter citrus.

  2. 5

    Optional aromatics

If desired, add 1 teaspoon lemon zest and 4 fresh mint leaves to the warm tea. Gently bruise the mint leaves between your fingers before adding to release aroma. Allow to infuse 1–2 minutes for a subtle lift.

  3. 6

    Serve

Pour the finished tea into cups. Garnish each cup with a lemon slice. Serve warm for a soothing drink, or chill the pitcher in the refrigerator for 30–60 minutes and serve over ice for iced Lemon-Chamomile tea.

  4. 7

    Storage

Refrigerate any leftover tea in a sealed container for up to 48 hours. If chilled, stir or shake gently before serving and add fresh lemon slices or ice as desired.
