    Prepare the shaker

    If using egg white, separate the egg and add the white to a cocktail shaker. Add bourbon, fresh lemon juice, black cherry liqueur, mezcal, simple syrup, and Angostura bitters.

    Dry shake (if using egg white)

    Seal and shake vigorously without ice for 15–20 seconds to emulsify the egg white and create a foamy texture.

    Wet shake

    Add ice (about 1 cup) to the shaker. Shake vigorously for 12–18 seconds until well chilled and the outside of the shaker feels cold.

    Double strain and serve

    Double strain the cocktail into a chilled coupe or Nick & Nora glass to remove small ice shards and any solids from the egg white.

    Optional smoke

    If you want a smoky accent, briefly smoke the glass with wood chips or use a smoking gun before pouring, or pour into a smoked glass. The small measure of mezcal already gives a faint smoky note.

Garnish & Finish

    Float a brandied or black cherry on the foam or skewer and rest on the rim. Express a lemon twist over the surface, wipe the rim with the twist, and drop it in or set it across the glass.
