Fried Oysters

Prepare oysters
Rinse shucked oysters gently in cold water and drain in a fine sieve or paper towel. Pat very lightly to remove excess moisture but do not dry them completely—moisture helps batter adhere. Keep refrigerated until ready to batter.

Make batter
In a medium bowl whisk together all-purpose flour, cornstarch, baking powder, 1 tsp fine salt, and 1 tsp black pepper. In a separate small bowl whisk the cold club soda (or ice water) with the egg until frothy. Pour the wet mixture into the dry ingredients and stir gently just until combined; a few lumps are fine. Batter should be thick but pourable—adjust with an extra tablespoon of club soda if too thick.

Prep dredge
Place panko breadcrumbs in a shallow bowl on one side. Set aside a small plate with a light sprinkle of flour for dry-dusting oysters if desired. This gives extra crispness and helps batter stick.

Heat oil
Pour oil into a deep skillet or pot to a depth of about 1 1/2 inches (enough for shallow deep-frying). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter—if it sizzles and rises slowly, it's ready.

Coat and fry oysters
Working in small batches to avoid crowding, lightly dust oysters with the plate of flour (shake off excess), dip each oyster into the batter to coat fully, then press into panko to cover (or for a lighter coating skip panko and fry directly from batter). Carefully lower oysters into hot oil using a slotted spoon or tongs. Fry 2–3 minutes per batch until golden-brown and crisp, turning if necessary. Do not overcook—oysters should be just set and tender inside. Remove to a wire rack set over a baking sheet or paper towels and season lightly with salt. Repeat until all oysters are cooked.
Spicy Mayo

Whisk together mayonnaise, sriracha, sesame oil, lemon juice, honey (if using), and 1/4 tsp salt in a small bowl until smooth. Taste and adjust heat or salt as desired. Chill until ready to serve. Transfer to a squeeze bottle or small bowl for plating.
Cucumber & Pickled Shallot

Quick-pickle shallot
Place thinly sliced shallot into a small bowl or jar. Add rice vinegar, water, sugar, and 1/4 tsp salt. Stir to dissolve sugar. Let sit at room temperature for at least 10 minutes (up to 1 hour) to mellow the shallot. The longer it sits, the milder the shallot becomes.

Plate: arrange fried oysters on a serving platter or individual plates. Spoon or pipe a little spicy mayo on each oyster or serve the mayo on the side for dipping.

Top each oyster with a small amount of the cucumber and 1–2 pickled shallot slices. Finish with a sprinkle of sesame seeds and a few cilantro leaves or microgreens, a squeeze of lemon, and a final pinch of black pepper if desired.

Serve immediately while hot and crisp. Leftovers will lose crispness; reheat in a 375°F (190°C) oven on a wire rack for 6–8 minutes if needed.
