Tea Base

Method

Tea Base

  1. 1

    Bring Water to Proper Temperature

Pour 12 oz (about 350 ml) of fresh, cold water into a kettle and heat to a full, but not rolling, boil (approximately 100°C / 212°F). English breakfast decaf is a black tea style; using fully boiled water extracts flavor best.

  2. 2

    Steep Tea

Place 2 decaffeinated English breakfast tea bags into a teapot or heatproof mug. Pour the boiling water directly over the tea bags. Cover or place a small saucer over the top to retain heat and steep for 4–5 minutes for a full-bodied brew. For a lighter cup, steep 3–4 minutes.

  3. 3

    Remove Tea Bags

After steeping, remove the tea bags. Gently press each bag once against the side of the teapot or spoon to extract remaining liquid, then discard the bags (do not squeeze vigorously, as that can release bitter tannins). Taste the tea; if too weak, allow a brief additional 30–60 second steep next time or use a slightly longer steep.

Milk & Add-ins

  1. 4

    Add Sweetener

Stir in 1 tsp granulated sugar (or honey to taste) while the tea is hot so it dissolves completely. Adjust sweetness to your preference.

  2. 5

    Add Milk

Add 2 tbsp whole milk to the cup and stir to combine. If you prefer a dairy-free option, substitute with your chosen milk alternative to taste. For a creamier texture, warm the milk slightly before adding or froth the milk and spoon the foam on top.

  3. 6

    Optional Finish

If desired, garnish with a lemon slice instead of milk (lemon and milk should not be combined). Serve immediately while hot.
