Tea

Method

Tea

1

Bring water to a boil

Pour 2 cups of fresh cold water into a kettle or saucepan. Heat on high until it reaches a rolling boil.

2

Pre-warm teapot or cups

If using a teapot, pour a little boiling water into it, swirl, then discard. This keeps the brewing temperature steady. If using cups only, you can pour some boiling water into the cups and discard before serving.

3

Steep the tea

Place 2 teaspoons of loose black tea (or 2 tea bags) into the warmed teapot or an infuser in a cup. Pour the boiling water over the tea leaves. Cover and steep for 3 to 5 minutes depending on desired strength (3 minutes for milder, 5 minutes for strong English Breakfast).

4

Heat the milk

While the tea steeps, gently heat 1 cup of milk in a small saucepan over low heat until warm but not boiling (about 2–3 minutes). You can also foam the milk lightly if you prefer textured tea. Keep warm.

5

Strain and combine

After steeping, strain the loose tea into a serving pot or remove the tea bags. Pour tea into cups, filling each about three-quarters full, then add warmed milk to taste (commonly about 1/4 to 1/3 cup per cup of brewed tea).

6

Sweeten and finish

Stir in granulated sugar to taste (start with 1 tsp and adjust). If you prefer lemon instead of milk, do not add milk; add a lemon wedge instead for a citrus note.

7

Serve

Serve immediately while hot, with milk and sugar on the side for guests who want to adjust. Enjoy with toast or a full English breakfast if desired.
