Prepare Oysters & Serving

    Chill bed

    Spread crushed ice or a layer of rock salt evenly on a large serving platter to create a stable bed that keeps oysters level and cold.

    Shuck oysters

    Using a clean oyster knife and a towel or glove for safety, hold each oyster flat side up. Insert the knife at the hinge, twist to pop, run the blade along the top shell to cut the muscle, remove top shell, and carefully cut the bottom muscle to free the oyster while keeping the liquor. Place each oyster on the chilled bed. Work quickly to preserve temperature. Keep shucked oysters covered on ice if not serving immediately (no more than 2 hours).

    Arrange lemon

    Cut lemons into wedges and arrange around the platter so guests can squeeze fresh juice on oysters.

Make Mediterranean Mignonette

    Prepare shallot

    Finely mince the shallot so it distributes evenly without overpowering the oysters.

    Combine ingredients

    In a small bowl combine red wine vinegar, minced shallot, chopped parsley, chopped oregano, chopped capers, olive oil, grated lemon zest, sea salt, and freshly ground black pepper. Stir thoroughly to dissolve salt and marry flavors. Taste and adjust: add up to 1 teaspoon more vinegar if you want brighter acidity or a pinch more salt if needed.

    Rest

    Let the mignonette sit at room temperature for 10–15 minutes to mellow the sharpness of the shallot and meld flavors. Give it a final stir before serving.

Finish & Serve

    Spoon a small amount (about 1/2 teaspoon) of the Mediterranean mignonette onto each oyster just before serving so the brine of the oyster isn't overly diluted. If using, add a tiny drizzle (about 1/8 tsp) of chili oil or a light pinch of Aleppo pepper for a gentle heat on select oysters.

    Garnish each oyster with a few microgreens or a small parsley leaf for color and fresh aroma. Serve immediately with lemon wedges and toasted baguette slices on the side.

    If there are leftovers, keep unopened oysters refrigerated in their shells and consume within 24 hours; discard any shucked oysters not eaten within 2 hours.
