Coffee

Method

Coffee

  1. 1

    Measure and grind

Measure 8 grams (approx. 0.042 cups) of whole coffee beans for a single 8 fl oz cup (ratio ~1:15 by weight). Adjust dose if you prefer stronger or weaker coffee. Grind the beans to a grind size appropriate for your brewing method: fine for espresso, medium-fine for pour-over, medium for drip, coarse for French press.

  2. 2

    Heat water

Heat 8 ounces (about 240 ml) of fresh cold water to the ideal brewing temperature: 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let rest 30 seconds.

  3. 3

Pre-wet filter and bloom (for pour-over or drip)

If using a paper filter, place it in the dripper and rinse with hot water to remove paper flavor and preheat the vessel. Discard rinse water. Add ground coffee and pour a small amount of hot water (about twice the weight of coffee, ~16 g water) evenly over grounds to saturate them. Let bloom for 30–45 seconds to allow gases to escape.

  4. 4

    Brew

Continue pouring remaining water in a steady spiral (pour-over) or start the machine (drip). For French press, add grounds to the beaker, pour all hot water, stir gently, place plunger up, and steep 4 minutes before pressing down slowly. For espresso, follow your espresso machine's dosing and tamping routine and extract ~25–30 seconds.

  5. 5

    Finish

Once brewed, immediately transfer coffee to your cup to prevent over-extraction or bitterness from sitting on grounds. Taste and adjust with optional sugar and/or milk/creamer to your preference.

  6. 6

    Serve

Serve hot. For iced coffee, allow to cool slightly then pour over ice (use double-strength brew if desired to compensate for dilution).
