    Warm dairy

    In a medium saucepan, combine whole milk and heavy cream. Warm over medium heat until small bubbles form at the edge (do not boil), about 5–7 minutes, stirring occasionally to prevent skin.

    Beat yolks and sugar

    While the dairy warms, whisk the egg yolks and granulated sugar in a heatproof bowl until pale and slightly thickened, about 1–2 minutes.

    Temper eggs

    Slowly stream 1/3 of the hot milk mixture into the yolks while whisking continuously to temper. Then pour the tempered yolk mixture back into the saucepan with the remaining milk mixture, stirring constantly.

    Gentle cook

    Cook the custard over low–medium heat, stirring constantly with a wooden spoon or heatproof spatula and scraping the bottom. Cook until the mixture thickens enough to coat the back of the spoon and registers 170–175°F (77–80°C), about 3–5 minutes. Do not boil.

    Add sugars and flavor

    Remove the saucepan from heat. Stir in the dark brown sugar, light molasses, and pure vanilla extract until fully dissolved and the custard is smooth and glossy.

    Strain for silkiness

    Pour the custard through a fine-mesh sieve into a clean bowl to remove any coagulated egg bits for a velvety texture.

Finish & Optional Garnish

    Enrich and cool

    Whisk in the unsalted butter until melted and incorporated. Stir in the fine sea salt. For best texture, cool the custard quickly by placing the bowl in an ice bath and stirring occasionally until lukewarm, about 8–10 minutes.

    Chill

    Cover the surface with plastic wrap (to prevent skin) and refrigerate until fully cold and set, at least 2 hours or up to 48 hours. This deepens the flavors.

    Serve

    Before serving, taste and adjust: sprinkle sea salt flakes lightly for contrast, and optionally garnish with toasted chopped pecans and a touch of lemon zest to brighten the deep, mellow sweetness.
