Prepare the Roast

Preheat your oven to 325°F (163°C). Season the beef roast with salt, pepper, garlic powder, and onion powder. Place it in a roasting pan.

Roast the Beef

Roast the beef in the preheated oven for about 2 to 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 15 minutes.

Make the Gravy

In a saucepan, bring the beef broth to a simmer. In a small bowl, mix cornstarch with water to create a slurry. Slowly add the slurry to the simmering broth, stirring continuously until thickened.

Prepare the Mashed Potatoes

Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.

Assemble the Dish

Slice the rested roast beef and place it on top of a yeast roll. Ladle the gravy over the beef. Serve with a generous scoop of mashed potatoes on the side.
