    Prepare the Filling

    In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté until soft, about 5 minutes.

    Add Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool.

    Mix the Filling

    In a large bowl, combine the cooked spinach and leeks with crumbled feta cheese, salt, black pepper, and the egg. Mix well until all ingredients are combined.

    Prepare the Phyllo Dough

    Lay out the phyllo dough on a clean surface. Keep the unused sheets covered with a damp cloth to prevent drying out.

    Assemble the Manti

    Take one sheet of phyllo dough, brush it lightly with olive oil, and place another sheet on top. Cut the layered sheets into rectangles (about 10cm x 5cm). Place a spoonful of filling in the center of each rectangle.

    Fold and Seal

    Fold the sides of the rectangle over the filling and then roll it up to form a manti shape. Seal the ends with a little water.

    Bake the Manti

    Place the assembled manti on a baking tray lined with parchment paper. Brush the tops lightly with olive oil. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.

    Serve

    Serve the Spanakopita Manti hot, drizzled with tzatziki sauce on the side.
