Filling Preparation

    Sauté the Onions and Garlic

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.

    Cook the Spinach

    Add the fresh spinach to the skillet. Cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    Mix the Filling

    In a large bowl, combine the sautéed spinach mixture with crumbled feta, ricotta, beaten egg, nutmeg, salt, and pepper. Stir until well mixed.

    Prepare the Phyllo Dough

    Preheat your oven to 375°F (190°C). Lay out the phyllo dough sheets on a clean surface and cover with a damp cloth to prevent drying out.

    Layer the Phyllo

    Take one sheet of phyllo and brush it lightly with melted butter. Place another sheet on top and repeat the brushing process. Continue layering 6-8 sheets.

    Fill and Fold

    Spoon the spinach filling along one edge of the layered phyllo. Fold the sides over the filling and roll tightly into a log shape. Place seam side down on a baking sheet.

    Bake the Spanakopita

    Repeat the layering and filling process until all filling is used. Brush the tops with olive oil. Bake in the preheated oven for 25-30 minutes, or until golden brown.
