Sorbet Ingredients

Gelato Ingredients

Method

Sorbet Directions

  1. 1

    Prepare the Fruit

Wash and chop the fresh fruit into small pieces. If using strawberries, hull them before chopping.

  2. 2

    Make the Syrup

In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let cool.

  3. 3

    Blend Ingredients

In a blender, combine the chopped fruit, cooled syrup, and lemon juice. Blend until smooth.

  4. 4

    Freeze the Sorbet

Pour the mixture into a shallow dish and freeze for about 4 hours, or until solid. Stir every hour to break up ice crystals.

  5. 5

    Serve

Scoop the sorbet into bowls or cones and enjoy!

Gelato Directions

  1. 6

    Heat Milk and Cream

In a saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, then remove from heat.

  2. 7

    Whisk Egg Yolks and Sugar

In a bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

  3. 8

    Temper the Egg Yolks

Gradually add the hot milk mixture to the egg yolks, whisking constantly to prevent curdling. Once combined, pour the mixture back into the saucepan.

  4. 9

    Thicken the Mixture

Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes). Do not boil.

  5. 10

    Add Vanilla

Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 2 hours.

  6. 11

    Churn the Gelato

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until smooth and creamy.

  7. 12

    Freeze and Serve

Transfer the gelato to an airtight container and freeze for at least 4 hours before serving. Scoop and enjoy!
