Prepare the Almonds
Place the almonds in a heatproof bowl and cover them with boiling water. Let them sit for about 10 minutes.

Peel the Almonds
After 10 minutes, drain the almonds and let them cool slightly. Once they are cool enough to handle, peel the almonds by pinching them between your fingers.

Prepare the Garlic
While the almonds are soaking, peel the garlic cloves and set them aside.

Blend Ingredients
In a food processor, combine the peeled almonds, garlic cloves, olive oil, lemon juice, salt, and water.

Puree the Mixture
Blend the mixture until it reaches a smooth and creamy consistency. If the puree is too thick, add more water, a tablespoon at a time, until desired consistency is reached.

Taste and Adjust
Taste the skordalia and adjust the seasoning with more salt or lemon juice if needed.

Serve
Transfer the skordalia to a serving bowl and drizzle with additional olive oil if desired. Serve with crusty bread or vegetables.
