    In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

    Add Garlic and Mushrooms

    Add the minced garlic and sliced mushrooms to the pot. Sauté for another 3-4 minutes until the mushrooms are tender.

    Incorporate Zucchini

    Stir in the diced zucchini and cook for an additional 3 minutes.

Cooking

    Add Liquids

    Pour in the red wine and vegetable broth, stirring to combine well. Bring the mixture to a simmer.

    Season the Mixture

    Add salt, black pepper, thyme, rosemary, and the bay leaf. Stir well and allow to simmer for 20 minutes, uncovered, until the flavors meld.

Finishing Touches

    Remove the bay leaf. Adjust seasoning to taste, if necessary.

    Ladle the Silverado into bowls and top with chopped parsley and grated Parmesan cheese before serving.
