Shrimp Marinade

Prepare the Marinade
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.

Marinate the Shrimp
Add the peeled and deveined shrimp to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
Vegetable Skewers

Prepare the Vegetables
While the shrimp is marinating, cut the red onion into wedges, and the bell pepper into chunks. Rinse the cherry tomatoes.

Assemble Skewers
Thread the marinated shrimp, onion wedges, cherry tomatoes, and bell pepper chunks onto the skewers, alternating as desired.
Tomato Orzo

Add Broth and Tomatoes
Stir in the diced tomatoes and vegetable broth. Bring to a boil.

Cook Orzo
Add orzo pasta to the boiling mixture. Reduce heat, cover, and simmer for 10-12 minutes or until the orzo is tender and liquid is absorbed.

Season the Orzo
Remove from heat, season with salt and black pepper, and stir in chopped parsley.

Serve the grilled shrimp souvlaki with the tomato orzo on the side. Garnish with additional parsley if desired.
