Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp
Add the peeled and deveined shrimp to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for 3-4 minutes, or until the shrimp are pink and opaque.

Add Roasted Tomatoes
Stir in the chopped roasted tomatoes and cook for an additional 2-3 minutes, allowing the flavors to meld together.

Incorporate Feta Cheese
Sprinkle the grated feta cheese over the shrimp and tomato mixture. Allow it to melt slightly for about 1-2 minutes.

Transfer the shrimp saganaki to a serving dish, garnish with additional parsley if desired, and serve with lemon wedges on the side.
