    Prepare the Phyllo Dough

    Thaw the phyllo dough according to package instructions. Preheat your oven to 350°F (175°C).

    Prepare the Nut Filling

    In a bowl, combine the chopped pistachios and walnuts. Set aside.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Brush a 9x13 inch baking dish with some of the melted butter.

    Layer the Phyllo and Nut Filling

    Layer 5 sheets of phyllo dough in the baking dish, brushing each layer with melted butter. After 5 layers, spread a thin layer of the nut mixture over the phyllo. Continue layering 5 more sheets of phyllo, brushing with butter, followed by more nut filling. Repeat this process, finishing with 5 layers of phyllo on top.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes.

    Bake the Baklava

    Bake in the preheated oven for 45-50 minutes, or until golden brown and crisp.

    Prepare the Caramel Sauce

    In a saucepan, combine granulated sugar, brown sugar, and water. Heat over medium heat, stirring until sugar dissolves. Allow to boil without stirring until the mixture turns a deep amber color.

    Add Cream and Salt

    Remove the saucepan from heat and carefully stir in heavy cream, vanilla extract, and sea salt. Return to low heat and stir until smooth.

    Soak the Baklava

    Once the baklava is out of the oven, immediately pour the warm caramel sauce over it, ensuring to cover it completely.

    Cool and Serve

    Allow the baklava to cool for at least 2 hours before serving. Cut along the scored lines and serve.
