Prepare the Steak

Take the bone-in filet mignon out of the refrigerator and let it rest at room temperature for about 30 minutes.

Season the Steak

Rub the steak with olive oil, then season generously with salt, black pepper, and fresh thyme on both sides.

Prepare the Vegetables

While the steak is resting, wash and cut the mixed bell peppers, zucchini, and red onion into bite-sized pieces.

Preheat the Grill

Preheat your charcoal grill to high heat, ensuring the coals are glowing and covered with white ash.

Grill the Steak

Place the seasoned filet mignon on the grill. Cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time for desired doneness.

Grill the Vegetables

In a grilling basket or on skewers, toss the mixed bell peppers, zucchini, and red onion with a little olive oil and balsamic vinegar. Grill alongside the steak, turning occasionally, for about 5-7 minutes until tender.
