Prepare the Steak
Take the bone-in filet mignon out of the refrigerator and let it rest at room temperature for about 30 minutes.
Preheat the Grill
Preheat your charcoal grill to high heat, ensuring the coals are glowing and covered with white ash.
Grill the Steak
Place the seasoned filet mignon on the grill. Cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time for desired doneness.
Grill the Vegetables
In a grilling basket or on skewers, toss the mixed bell peppers, zucchini, and red onion with a little olive oil and balsamic vinegar. Grill alongside the steak, turning occasionally, for about 5-7 minutes until tender.
Rest the Steak
Once cooked to your liking, remove the filet mignon from the grill and let it rest for 5-10 minutes before slicing.
Serve
Slice the filet mignon and serve it alongside the grilled vegetables, drizzling any remaining balsamic vinegar over the top for added flavor.
